Chaource is a round soft cheese from the Champagne-Ardenne region. It's named after the village Chaource, where it has been made since the 14th century. It boasts AOC protection since 1970.
This double cream brie has a velvety white rind and intensely creamy, salty, nutty taste, that sharpens with age. Chaource ripens for 2-4 weeks. Smooth when young, it turns liquid as it matures, developing a sharp after taste - the perfect contrast for that gorgeous, velvety cream.
