- Goat's milk - 

Made from goat's milk, this cheese has a unique round and truncated cone shape, and a very old tradition. Made for the first time in the 19th century, it's named after the commune of Selles-sur-Cher in the Loire-et-Cher where it was made. The Selles-sur-Cher was one of the first to be accepted as an AOC product, in 1975.

The cheese is first moulded manually, then unmoulded and ashed with a mixture of charcoal and salt. The more it ages, the more pronounced its character and nutty flavour. Its rind is pigmented with bluish moulds. The final product offers our taste buds a well-developed goaty flavour, due in particular to the hay of the Cher Valley eaten by the goats.
