Mt Stirling Olive Farm is located at Glen Aplin, around 10 kilometres from Stanthorpe, and produces some amazing, quality olive products. As well as cold-pressed oils and preserved olives, owners Jim and Vivienne are making this delectable tapenade, following the traditional recipe.
Tapenade is a provençal dish consisting of puréed or finely chopped olives, capers, garlic and olive oil. Its name comes from the Provençal word for capers, tapenas. It is a popular food in the South of France, where it is generally eaten as an hors d'oeuvre spread on bread, but sometimes it is used to stuff poultry or to embellish a dressing.
