- Raw Cow's milk -
Mont Vully cheeses are made by small and independent Fromagerie Schafer in Cressier, in the Fribourg Canton of Switzerland. Named after the mountain of the Three Lakes region, Vully Rouge is a particularly aromatic semi-hard cow milk cheese.
At the end of production, Vully Rouge is washed several times a week, for about 10 weeks, with Pinot Noir from neighbouring vineyards - resulting in a delicious, spicy, distinct red rind.
The cheese is then matured by Affineur Hervé Mons in his railway-tunnel-turned-cheese-maturation-room. The rind has a lovely dark-orange hue, while the interior is pale in colour. The texture is delicate; the flavours are rich and slightly piquant.
